I usually like to save the “best of” emails for the end of the year, but I couldn’t help myself. In this email, I’ve included five recipes that I’m really proud of (and that might be a little underappreciated). But if there’s anyone who appreciates a good recipe, I think it’s you. My Best Protein Mac and CheeseIn my seven years of kinda healthy food blogging, I’ve made a lot of protein mac and cheese recipes. But I wasn’t sure how my recipes stacked up to others. So, I recently tested six of the internet’s most popular recipes, including one of my own, to develop my ultimate version. Mediterranean Chicken & VeggiesWhile this recipe was designed for a grill, you could bake or air fry this duo if you’re without a grill. I say that because I REALLY want someone to make this recipe. It’s too good to go unnoticed, IMO! Roasted Veggie EnchiladasThis isn’t the highest protein option on the list, but I occasionally get a craving for a beaucoup of veggies. And this recipe is exactly that. A ton of veggies are roasted in an air fryer or oven and then given the enchiladas treatment. You could add some of my Mexican shredded chicken or leftover rotisserie chicken to give these a protein boost if you wanted. Either way, plenty of diggity. Italian Ground Turkey SoupThis ground turkey soup combines extra lean ground turkey, Italian seasoning, garlic, and Calabrian peppers with frozen cauliflower gnocchi and a cheesy ricotta sauce. Before cauliflower gnocchi sends you running for the Italian alps, you can definitely make this soup with pasta instead. For such a thick and creamy turkey soup, it’s surprisingly low calorie. Every giant serving has 33 grams of protein with only 24 grams of carbs and 345 calories. And when I say giant, I mean giant. One serving is fourteen ounces and nearly two cups. I hope you brought your appetite! Easy One-Pot BBQ Pulled ChickenYou’ve probably seen me raving about my “favorite chicken recipe of all time” in my Mexican shredded chicken, but it can be a little intimidating with all the browning chicken, simmering in beer, etc. I made this recipe as an alternative to show the power of cooking in a Dutch oven. All you do is mix a few spices together, throw chicken in the pot, cover, and bake. Within an hour, you have juicy pulled chicken.
